The best Greek lentil soup (Fakes)

We are enjoying fall days by visiting our nearby nature, parks, lakes and we feel grateful for that. We cook a simple Greek lentil soup to warm up ourselves and feel healthy. The simplest combination of ingredients makes the best lentil soup you ever had. The simplest ingredients of nature make the most scenic views you saw today.

Sometimes we just have to make no sound, to be quiet for a little and listen. Listen to our inner voice. Listen to others talking. Listen to nature sounds. Feel the air whispering to our ears. Feel grateful. Feel grateful for our health, our family, our friends, ourselfs.

Simplicity. We don’t need complicated stuff to feel happy. To feel full. Simple food, simple recipes, simple ingredients can make amazing food like this Greek lentil soup. Simple but so delicious!


Lentil soup

Ingredients:

  • 1 cup Greek lentils (17–18 ounces)
  • 5 cups of water
  • 1 small onion, chopped
  • 2 carrots, chopped
  • 2 cloves of garlic (or 1 big)
  • 2 bay leaves
  • 1/4 cup Greek Extra Virgin olive oil
  • 3 tbsp tomato sauce (optional)
  • 3 tbsp vinegar Salt and Pepper (to taste)

What to do:

Start by washing the lentils thoroughly and let them soak in water for 1 hour.

In a pot add the lentils, the water, the chopped onions, the garlic cloves and the bay leaves. When the water starts boiling, lower the heat to low and let them cook with the lid on for 45 mins.

After 45 mins of cooking add in the olive oil, the vinegar, the tomato sauce and season with salt and pepper. Let them cook for another 15 minutes, until it thickens.

Serve this delicious Greek lentil soup with a drizzle of olive oil, feta cheese, Kalamata olives, fresh baked bread and a tin of sardines and enjoy!

Note: Keep in my mind that different kinds of lentils cook at different times.
