
25 Oct Pumpkin Soup for Halloween
A Spooky Pumpkin soup that yoy have to try at your own risk! Hahahaha
I was shooting new recipes for Halloween non stop last week. I also had preparations for our Halloween party so I had no time to post anything here or on the greekandsimple.com.
Here I start with a “starter” spooky pumpkin soup! We adore this recipe as a family and I hope you are going to adore it too!
Ingredients:
- 5 tbsp. Greek Extra-virgin olive oil
- 2 tbsp unsalted butter
- 1 large onion, chopped
- 3 small to medium potatoes, chopped
- 3 carrots, chopped
- 2 cloves garlic, minced
- 1 leek, chopped
- 4 lb. pumpkin (any kind)
- 4 cups (1lt) of water
- Freshly ground black pepper and salt
- 1/2 tsp of paprika and rosemary

How to:
Chop all the veggies. In a soup pot heat the Greek extra-virgin olive oil. Add all chopped veggies and cook until softened.
Add water to the pot.
Season with salt, pepper and paprika.
Add the rosemary. Bring to a boil, uncovered, then reduce heat to a simmer. Simmer until pumpkin and other veggies are tender, about 20 – 30 minutes.
Add the butter and remove the pot from heat.
Separate “juice” and veggies in two pots. Leave some “juice” to the pot with veggies. Using a hand blender, blend mixture until smooth.
Add more “juice” and make it as thick or watery you want. Add some paprika to serve or red hot chili pepper for some more spicy flavor.

Serve:
Serve with freshly baked bread with Greek Extra – virgin olive oil and paprika.

HOW TO GARNISH YOUR SOUP WITH A CREAMY SPIDERWEB:
- Drizzle heavy cream in the pattern of a spiral on top of the soup.
- Draw 8 lines from the center to the edge of the plate with a skewer to create a spiderweb.
