Summer is the best period to enjoy a refreshing Jello.
It happens for me to have in our backyard in Greece trees with fresh fruits.
A jello is perfect for cooling off on a hot day, a mouthwatering treat that you can make very easy with any kind of fruit or juice you like. Here is my apricot recipe jello.

Ingredients:
- 60 ml water
- 2 1⁄2 tablespoons gelatin powder
- 750ml apricot nectar
- 55g sugar

The Method:
Place water in a small bowl.
Sprinkle over gelatine, stir to combine.
Set aside 5 minutes till absorbed.
Place nectar and sugar in a saucepan.
Stir over medium heat till sugar dissolves.
Add gelatine mixture, stir till dissolved.
Pour into a greased 6 cup mold.
Refrigerate till set.
Enjoy!
