MAking over a childfood memory of a greek sandwich

Everything starts with an idea.

An idea to change, to create, to improve something.

First is in your head and then you make it real.

And here we are today having our picnic in the new room!

 

But let’s take everything from the beginning.

I am going to bake a really tasty bread and when it’s ready I am going to make a Greek sandwich that my grandma used to make for me during the summer in our village, at Central Greece.

 

The bread recipe is simple and the bread is really tasty. 

I use a mix of flours, salt, olive oil, water and yeast. For the activation of the yeast I use one spoon of sugar and I make sure the water is at the right temperature.

When the yeast foams I blend it with the rest of the ingredients and leave my kitchen mixer to do the rest of the job.

I take a soft and little sticky dough which I cover with little flour and I transfer to the dutch oven.

Lately, I found that It is not hard to make a design on the bread with a sharp knife so here is my design. 

This is a very important step. 

Measure the water temperature then add the yeast and the sugar.

Mix until dissolved and then put aside to let it foam.

After 10 mins approximately the yeast has foam. 

I add it to the mixing bowl of my kitchen mixer along with all the other ingredients except any filling if I am adding. These are going at the end.

I put the mixer in medium to high speed on the hook tool for 8 mins.

After 8 mins is the time to add any fillings and mix until for 1 min.

If I am not adding anything I just transfer it to my dutch oven which I had lined up with parchment paper.

I let it rise in the preheated 170 F ( 75 C) oven with the lid on for 50 mins.

After 50 mins I turn the oven to 425 F (200 C) and bake for 35 to 40 mins. 

Don’t open the door until it is baked.

The baked bread had an interior temperature 350 F (177 C) and a golden crust!

Enjoy one or two slices of the freshly bakes bread with slices of feta cheese, tomato, kalamata olives, oregano and olive oil!

Ingredients for a loaf of bread:

  • 500gr bread flour ( I use a mix of 250gr whole wheat & 250gr unbleached bread flour)
  • 1 dry yeast (7gr)
  • 1 Tbsp sugar
  • 25ml Greek Extra virgin olive oil
  • 320ml warm water (40 oC)
  • 12gr salt
  • Optionally, I sometimes add flaxseeds in the dough or any other fillings I want like olives, feta, sun dried tomatoes, oregano, garlic etc.

The method I use:

First I measure all the ingredients and I put some water to boil which I am going to mix with the room temperature water. I need 40 C or 104 F in order to activate the dry yeast.
