Summer slipped through our hands, and before we even noticed, autumn quietly arrived. But the beauty of summer lingers—in our hearts, in our memories, and even on our plates. One of my favorite ways to keep that sunshine alive is through food, and today I’m sharing a simple recipe inspired by Greece: French toast with a Mediterranean twist.

Why I Love This Recipe

This dish is the perfect bridge between seasons. It’s hearty enough for cooler mornings yet still carries the fresh, bright flavors of summer. Imagine golden, crispy bread paired with peppery arugula, juicy tomatoes, creamy feta, and a drizzle of Greek olive oil. It’s comfort food, with a touch of sunshine.

Ingredients

  • 4-6 slices of homemade bread (or your favorite rustic loaf)
  • 3 large eggs
  • Pinch of salt and pepper
  • 2 tbsp olive oil, for frying
  • Handful of fresh arugula
  • 1–2 ripe tomatoes, sliced
  • 80g Greek feta cheese
  • Dried oregano
  • Extra virgin Greek olive oil, to drizzle

Instructions

  2. Whisk the eggs: In a shallow bowl, beat the eggs with a pinch of salt and pepper.

  3. Cook the bread: Heat olive oil in a skillet over medium heat. Dip each slice into the egg mixture, then fry until golden and crisp on both sides.

  4. Assemble: Serve the toast with arugula, fresh tomatoes, crumbled feta, a sprinkle of oregano, and a generous drizzle of Greek olive oil.
