05 Feb Chocolate Truffles with No Added Sugar
Simple, Rich & Naturally Sweetened
These chocolate truffles are one of my favorite small sweets to make — simple, nourishing, and deeply satisfying. Naturally sweetened and made with wholesome ingredients, they’re perfect for quiet moments, celebrations, or when you want something sweet without excess.
In the video, I make them slowly, alongside finishing a painting — because for me, food and creativity often meet in the same space. Both are rituals. Both are meant to be enjoyed without rush.

Instructions

Place the almonds, cocoa powder, dates, nut butter, vanilla, salt and strawberries in a food processor.

Process until the mixture comes together and forms a soft dough.

Scoop small portions and roll into bite-sized balls using your hands.

Roll the truffles in the melthed chocolate and place them on top of a parchment paper

Top with your favorite toppings

Place in the fridge for at least 30 minutes to firm up.
That’s it — simple and satisfying.
Ingredients
Chocolate Truffles
- 1 cup ground almonds or almond flour
- 2 tbsp cocoa powder
- 6–8 Medjool dates, pitted and soaked in hot water for 10mins
- 1–2 tbsp almond butter or tahini
- 1 tsp vanilla extract
- Pinch of salt
- a handful of natural freezed strawberries
Chocolate coatings
- Semi sweet chocolate
- 1 Tbsp of avocado oil
- Finely chopped nuts or freezed strawberries
- seasalt (my favorite)




Tips for Best Results
- Use soft, sticky dates for the smoothest texture or soak them in hot water for 10mins before use.
- Adjust sweetness by adding more or fewer dates
- If the mixture feels dry, add a teaspoon of water or nut butter, I use tahini!
- Chill before serving for the best consistency
Storage
- Keep in an airtight container in the fridge for up to 7 days
- Freeze for up to 2 months
- Enjoy straight from the fridge or slightly softened at room temperature
