The Greek Spinach Pie 

Spanakopita, yay!

Spinach, leek & Feta brinks Greece on your plate. 

Last week they asked parents from my daughter’s school to bring some national food to school for the little ones to taste different culture food. I thought a little about it and then I decided that there is nothing more representative of a Greek food than Spanakopita.

This is my authentic version of Greek Spinach Pie Leek, spinach, onion, dill and of course our favorite Greek Feta Cheese! A really rich pie with golden crispy, puff pastry dough. Simple and delicious way to make it and enjoy it with friends and family! FYI the little ones loved it. 


Baked spanakopita

Ingredients:

  • 2 lb Baby spinach (washed well)
  • 1 Leek (chopped, only the white part)
  • 1 Onion (chopped)
  • ½ bunch of dill (chopped)
  • 2 blocks (~ 400gr) of Greek Feta Cheese (crumbled)
  • 3- 4 eggs
  • 5 Tablespoons Greek Extra Virgin Olive Oil
  • 2 Puff Pastry dough (room temperature)
  • Black Pepper to your taste

The method:

Step 1 Preheat the oven to 355 degrees F (180 degrees C).

Step 2 Heat 3 tablespoons of olive oil in a large skillet over medium heat. Saute chopped onion and leek, until they are soft and lightly browned. Stir in the baby spinach. Saute until baby spinach is limp, about 2 minutes. Remove from heat and set aside to cool down.

Step 3 In a medium bowl, mix together eggs, feta cheese, dill and black pepper. Then add the spinach mixture and stir them together. Lightly oil a square baking pan.

Step 4 Lay one puff pastry dough in the prepared baking pan and lightly push it so it will cover the whole surface of your pan. Then with a fork make some holes on it in order to “help” the stuffing to cook. Spread spinach and Feta cheese mixture into the pan and then lay on the top of it the second Pastry phyllo dough. Fold both dough together to seal the filling inside the pie. Brush with olive oil the top puff pastry dough and open some more holes with your fork.

Step 5 Bake your pie in a preheated oven for 45 to 50 minutes, until golden brown.

Cut into squares and serve warm. Enjoy!

Serve as this but even with a delicious Greek salad and even for breakfast along with a flavorful Greek coffee!
