17 Mar Chocolate tahini muffins
My favorite cake recipe is this one. Here today I am sharing a variation that we made with my daughter Ellie, because she really wanted muffins and chocolate! So orange and #chocolate tahini muffins. Simple and delicious!!! It is so easy to make, so great a match with your coffee or tea in the morning and has no dairy so it is a totally vegan recipe.
Ingredients:
- 350 gr cake flour (self raising flour)
- 200 gr sugar
- 300gr Greek tahini
- 350ml freshly made orange juice
- Orange zest from 2 oranges
- 5 to 6 Tablespoons Cocoa Powder (or 3 Tablespoons Cocoa Powder and 2 black Cocoa Powder)
- A handful of chocolate chips semi-sweet
Top it with buttercream:
- ½ cup unsalted butter (at room temperature)
- 2 cups confectioners sugar
- 1 ½ teaspoons vanilla extract
- 2 Tablespoons whole milk
- (Optional) Drops of food coloring, as needed and chocolate sprinkles.

The method:
Preheat the oven 350F (180 C).
Combine together, with a whisk, in a mixing bowl the sugar, the Greek tahini, the fresh orange juice and the orange zest until they are fully combined. Then add the flour little by little and the cacao. Lastly add the chocolate chips after you sprinkle them with a spoon of flour.
Bake in a muffin tray (after you spray it with a non-stick oil and sprinkle it with some flour) for 25 to 30 mins or until it’s golden brown and pass the knife test.
Let them sit for 10 mins and remove them from the tray.
The butter cream.
Cream butter in the bowl of a stand mixer fitted with the paddle attachment until smooth and fluffy. Gradually beat in confectioners sugar until fully incorporated with the butter. Add in the vanilla extract and the milk. Add food coloring, if you are using it. Mix until your desired color is reached.
Put it in a pastry bag and decorate the muffins when they are fully cool. Sprinkle with some chocolate sprinkles and enjoy!
Note:
If you want to make them extra “chocolaty” instead of orange juice add room temperature regulate coffee (decaf if you don’t want the caffeine)
