Gauros marinatos is the recipe that my father made during our summer vacation in Greece.
He said it is the best tsipouro meze.
I trust him. He knows better!
How to:
He cleaned all the little fish (gauros) from the bones, one by one creating filets from it.
He washed the fish filets well, placed them in a glass container with a lid and then added salt and vinegar in every row of gauros. At the end he pressed with his fingers so the vinegar will cover all the fish filets.
Lid on. Refrigerate. Add wait until gauros is ready.
Ingredients:
- 1kg of small fish (gauros)
- 300gr sea salt
- 200ml vinegar
Optionally you can add 1 clove of garlic and sliced chili pepper.

Serving with:
Serve with Greek virgin olive oil, toasted bread and tsipouro.
