Asparagus and Feta cheese Puffs

These delicious asparagus and feta cheese puffs are a snap to make and are sure to impress your friends and family! All you need is a few ingredients and a few minutes of your time! If you love baking with puff pastry as much as I do, check this recipe for sure!


For the asparagus pie snacks:

  • 1 puff pastry dough
  • 27 to 36 Fresh asparagus
  • 200gr Cream cheese
  • 150gr shredded parmesan
  • spices : garlic powder, fresh pepper, your favorite spices
  • Mix of 1 egg yolk and 1 tablespoon of water
  • 2 tablespoons of Greek virgin olive oil

Instructions

Preheat the oven to 180 C/ 355 F.

On a parchment paper roll out the puff pastry and cut it into pieces 9 to 12 rectangles. Add the cream cheese equally to each of them and the shredded parmesan.

Then top them with 3 asparagus spears per pastry.

Bring one corner of the puff pastry over the other and brush it with the beaten egg yolk with a tablespoon of water.

Repeat the process to all of them and arrange on a parchment lined baking sheet 2 inches apart.

Bake for 20 – 25 minutes until golden.

Best served fresh.


Feta cheese puffs

For the Feta Cheese Pie snacks we need:

1 puff pastry dough

100gr Feta Cheese

100gr Cottage Cheese

2 eggs

5 tablespoons of chopped dill

Fresh pepper

Sesame seeds

Mix of one egg yolk with a tablespoon of water

Instructions

Preheat the oven to 180 C/ 355 F.

On a parchment paper roll out the puff pastry and prepare the stuffing.

In a mixing bowl add the eggs, feta crumble, cottage cheese, fresh pepper and the chopped dill.

Mix well and spread the mixture to the pastry dough. But first use a fork and make some holes on it to help it bake evenly. Then roll the dough and cut even rings of it.

Place them on the baking tray on parchment paper.

Brush them with the beaten egg yolk with a tablespoon of water.

Repeat the process to all of them.

Sprinkle with sesame seeds and bake for 20 – 25 minutes until golden.

Best served fresh.
