12 Oct Chocolate Oatmeal Pancakes
Easy recipe for a Healthy & Quick Breakfast/ Brunch.
I really like to eat healthy and take good care of myself and my family.
A good day for me starts with a good breakfast. My favorite chocolate and banana pancakes that are served with fresh strawberries are super healthy because they contain little sugar and mostly eggs, Greek yogurt and oatmeal flour. After this breakfast I start my day with a smile!

Ingredients for 4 to 5 Pancakes:
- 2 whole eggs,
- 2 Tbsp Oatmeal flour,
- 2 Tbsp Greek Yogurt,
- ½ tsp vanilla extract,
- ½ tsp black cocoa powder,
- ½ tsp cocoa powder,
- 1 tsp powdered sugar,
- ½ espresso shot (decaf if you like or you can also add water instead of espresso to fix the consistency of the mixture)
How to:
Whisk eggs, yogurt, oatmeal flour, vanilla extract, both cocoa powder, sugar, espresso and banana together in a large bowl.
Starting with wet ingredients and lastly add the banana and espresso.
Here you can add chocolate chips if you like too.
Heat a lightly oiled griddle or skillet over medium-high heat.
For each pancake, pour 1/4 cup batter on a griddle and cook until bubbles pop in the center of the pancake, about 2 to 3 minutes.
Flip, and cook an additional minute on the opposite side.
Serve with fresh strawberries.
