Easy Cinnamon Rolls from Scratch – Beginner Friendly

There’s nothing better than the smell of warm cinnamon rolls baking in the oven. Soft, fluffy, and filled with sweet cinnamon swirl, these rolls are the perfect treat for breakfast, brunch, or holidays.

This recipe is designed for yeast beginners—the dough requires just one rise, making it quick, easy, and foolproof. Naturally sweetened with date puree (or sugar, if you prefer), these cinnamon rolls are delicious, cozy, and freezer-friendly. You can even prep them ahead of time, so they’re ready for any special occasion.

Ingredients

For the Dough:

  • 2 and 3/4 cups (344 g) whole wheat flour, plus more as needed
  • 1/4 cup (50 g) granulated sugar or date puree
  • 1/2 tsp salt
  • 3/4 cup (180 ml) whole milk or almond milk
  • 3 tbsp (43 g) unsalted butter or avocado oil
  • 2 and 1/4 tsp instant yeast (1 packet)
  • 1 large egg, room temperature

For the Filling:

  • 3 tbsp (43 g) unsalted butter, softened
  • 1/3 cup (67 g) date puree
  • 1 tbsp ground cinnamon

Optional Toppings:

  • Cream cheese icing, vanilla glaze, or simple powdered sugar icing

Instructions

1. Make the Dough

  • In a large bowl, whisk together the flour and salt. Set aside.
  • Heat the milk and butter together until the butter melts and the mixture is warm to the touch (about 110°F/43°C). Whisk in yeast until dissolved.
  • Pour into dry ingredients. Add egg and sugar/date puree. Mix until a soft dough forms.
  • Knead on a lightly floured surface for 3–5 minutes until smooth. Place in a greased bowl, cover, and let rest for 10 minutes.

2. Fill the Rolls

  • Roll dough into a 14×8 in (36×20 cm) rectangle.
  • Spread with softened butter, then spread cinnamon + date puree mixture on top.
  • Roll into a 14-inch log, cut into 10–12 rolls, and arrange in a greased baking dish.

3. Rise

  • Cover and let rise in a warm spot for 60–90 minutes until doubled in size.

4. Bake

  • Preheat oven to 375°F (190°C).
  • Bake for 24–27 minutes until golden brown and cooked through (195–200°F internal temperature).
  • Let cool slightly before topping with icing.

Tips & Storage

  • Make Ahead: Freeze unbaked rolls after shaping, or freeze baked rolls without icing.
  • Storage: Keep at room temp for 2 days or refrigerate up to 5 days.
  • Flavor Twist: Add chopped nuts, raisins, or cardamom to the filling.
