Pumpkin spice cookies with cream cheese filling

A Halloween cookie recipe for cookies that we all love. We love making cookies with my daughter and we love to eat them! Baking is our thing! We bake cookies often with Ellie. These are our special pumpkin spice cookies with simple cream cheese stuffing/filling that makes them even more delicious. This recipe is very simple and quick. You are not going to need more than 30 minutes.


Halloween pumpkin spice cookies with cream cheese filling

Ingredients:

  • 200gr butter, cold in pieces
  • 110 gr powder/ confectioners’ sugar 
  • 300 gr all-purpose flour
  • 2 tsp  ground cinnamon 
  • 1 Tbsp pumpkin spice 

For the stuffing/filling :

  • 250gr cream cheese, room temperature
  • 4 Tbsp powder/ confectioners’ sugar 
  • 1 tsp vanilla extract 
  • 2-3 Tbsp of heavy milk

How to:

Add the butter, the sugar, the flour and spices in a mixer’s bowl and beat it, for 4-5 minutes, until the mixture looks like wet sand.

Remove the dough from the mixer and knead it with your hands until it is thick and malleable.

Divide the dough into 2 pieces. Transfer one of the pieces over a parchment paper. Cover with another piece of parchment paper and, with a rolling pin, roll out the dough until it has the same size as the baking sheet.

Remove the parchment paper and cut the cookies with Halloween cutters. Follow the same process for the remaining dough.

Put the baking sheets with the cookies into the freezer, and chill for 20 – 30 minutes.

Bake in a preheated oven for 8 to 10 minutes or until the cookies look golden brown on their corners.

Let them cool well before you add the filling.

For the filling add in a mixing bowl the cream cheese, the sugar, the vanilla extract and the heavy milk then whisk well until you have a fluffy nice cream. Transfer the cream cheese filling in a decorative bag and cut the tip of it.

When the cookies are cool then add the cream cheese filling using the decorating bag on the top of one and cover with another cookie so that you get  approximately 20 cookies.
