Tahini Walnut Cake – A Cozy Fall Treat

There’s something magical about the flavors of fall. The air gets crisp, oranges are at their sweetest, and we crave warm, comforting bakes. This Tahini Walnut Cake is one of those recipes that feels both wholesome and indulgent. Made with nutty tahini, sweet dates, fresh orange juice, and crunchy walnuts, it’s dairy-free, sugar-free, and packed with flavor.

Perfect for an afternoon coffee, a light dessert, or even breakfast, this cake brings together Mediterranean flavors with a cozy seasonal twist.

Ingredients

  • 300 g tahini
  • 300–350 g whole wheat flour
  • 350 g freshly squeezed orange juice
  • Zest of 2 oranges
  • 1 tsp vanilla extract
  • 200 g date purée (see below for instructions)
  • Pinch of salt
  • 1 tbsp baking powder
  • A handful of chocolate chips
  • A handful of walnuts, crushed

Instructions

  1. Prepare the oven: Preheat to 350°F (180°C). Grease a cake pan or line with parchment paper.

  2. Mix the base: In a large mixing bowl, whisk together tahini, orange juice, orange zest, vanilla extract, and the date purée until smooth.

  3. Add dry ingredients: Gradually add flour, salt, and baking powder. Mix gently with a spatula (marize) until combined.

  4. Fold in extras: Stir in the crushed walnuts and chocolate chips.

  5. Bake: Pour the batter into the prepared pan and bake for about 1 hour, or until a knife inserted in the center comes out clean.

  6. Cool & serve: Let cool slightly before slicing. Enjoy warm or at room temperature.

How to Make Date Purée

  • Weigh 200 g pitted dates and soak them in hot water for 10 minutes.
  • Drain well, then blend in a food processor until smooth.

This purée is a fantastic natural sweetener you can also use in other cakes, muffins, or even breakfast bowls.

Tips & Variations

  • For a deeper flavor, lightly toast the walnuts before adding them to the batter.
  • Swap chocolate chips for raisins or cranberries if you want a fruitier twist.
  • This cake pairs beautifully with Greek coffee or a cup of strong black tea.
  • Add 3 Tbs of swifted cocoa powder in the flour and make it chocolaty.
  • Top it with chocolate! Orange and chocolate are a great together!
