Oatmeal Pancakes

This is one of my favorite ways to start my day. Easy recipe. Pancakes in no time. Healthy and fulfilling breakfast. I like to top them with some blueberries, strawberries, Greek yogurt, ground cinnamon and Greek honey or maple syrup.

Note: This recipe is for one person (4 – 5 pancakes). If you want more pancakes, double or triple equal the quantity of ingredients.

Ingredients: 

  • 2 eggs (beaten),
  • 2 Tablespoons of Greek Yogurt 
  • 2 Tablespoons of Oat flour
  • ½ teaspoon of vanilla extract (optional)
  • ½ teaspoon of ground cinnamon (optional)

Oat pancakes with Greek yogurt, honey and fresh blueberries

The method:

With your whisk mix all ingredients together in a bowl starting with eggs and Greek yogurt. Add the oats flour and cinnamon last.

On a nonstick warm skillet pour a few drops of Greek Extra Virgin Olive oil and add your oat pancake mixture. Flip the pancake when you see little bubbles on the surface.

Few minutes only you are going to need to make them all.

Top them with your favorite topping and enjoy!
