Authentic Greek Spanakopita

Spinach Pie with leek, Feta & dry tomatoes.

I am really excited to share this authentic version of Greek Spinach Pie with Leek, Dry tomatoes, onion, dill and of course our favorite Greek Feta Cheese! A really rich pie with golden crispy, pastry phyllo dough. Simple and delicious way to make it and enjoy it with friends and family!


Ingredients

  • 2 lb Baby spinach (washed well)
  • 1 Leek (chopped, only the white part)
  • 1 Onion (chopped)
  • ½ bunch of Dill (chopped)
  • A Handful of Dry tomatoes (chopped)
  • 2 blocks (~ 400gr) of Greek Feta Cheese (crumbled)
  • 4 eggs
  • 5 Tablespoons Greek Extra Virgin Olive Oil
  • 2 Phyllo Pastry dough (room temperature)
  • Black Pepper to your taste

Baked Spanakopita, sliced and ready to be served.

How to:

Step 1 Preheat the oven to 355 degrees F (180 degrees C).

Step 2 Heat 3 tablespoons olive oil in a large skillet over medium heat. Saute chopped onion and leek, until they are soft and lightly browned. Stir in the baby spinach. Saute until baby spinach is limp, about 2 minutes. Remove from heat and set aside to cool down.

Step 3 In a medium bowl, mix together eggs, feta cheese, chopped dry tomatoes, dill and black pepper. Then add the spinach mixture and stir them together. Lightly oil a square baking pan.

Step 4 Lay one phyllo pastry dough in the prepared baking pan and lightly push it so it will cover the whole surface of your pan. Then with a fork make some holes on it in order to “help” the stuffing to cook. Spread spinach and Feta cheese mixture into the pan and then lay on the top of it the second Pastry phyllo dough. Fold both dough together to seal filling inside the pie. Brush with olive oil the top phyllo dough and open some more holes with your fork.

Step 5 Bake your pie in a preheated oven for 45 to 50 minutes, until golden brown.

Cut into squares and serve warm. Καλή Όρεξη!

Serve as this but even with a delicious Greek salad and even for breakfast along with a flavorful Greek coffee! My favourite Greek Breakfast is this!
